Basil Homemade Pasta with Mushrooms and Parmeggiano

It has been a week in which, unlike other places, it has rained a lot and seems like autumn has come around here. This has put me in a mood of reflection, desire for certain things to happen, somehow also a more demanding attitude for the right things from certain people around me. Not always the right thing to do seems this way in the others eye and this is producing a immense sadness in my heart, because always these things will be right, no matter from which angle you’ll be watching it.
But, that’s enough with my reflection, let’s just have a look at the giveaway I launched last week, together with Miss Babacilu. Few months ago, I finally bought a pasta machine and since then I’m experimenting pasta dishes. Thus, this delicious recipe appeared, and the ones which are already using pasta machines at home, know already that nothing compares with pasta homemade. I love the flavor of basil and garlic, and I couldn’t help myself not to include them in this pasta dough. They taste amazing!




Ingredients (for 4 servings):
200g flour (type 00)
2 whole eggs
1 pinch of salt
a handful of fresh basil leaves
2 tablespoons olive oil
1 small garlic clove
To serve :
200g mixed mushrooms
2 medium spring onions
2 tablespoons olive oil
salt and pepper
parmeggiano
Directions:
1. Process all ingredients in a food processor until a dough forms. Turn onto a lightly floured surface and knead until smooth and elastic (3-5 minutes), then wrap in plastic wrap and set aside to rest in the fridge (1 hour).
2. Divide dough into four, then, working with one piece at a time, feed through pasta machine rollers, starting at the widest setting. Lightly flour dough as you fold and feed it through, reducing settings notch by notch, until pasta is 3mm thick (level 1). Take each pasta sheet and feed through pasta machine spaghetti cutter.
3. Cook the pasta in salty boil water. Meantime saute the mushrooms with onions finely chopped. Serve the pasta garnished with mushroom mix and topped with parmeggiano.
