When I discovered the internet and all its powers I was thinking a lot to freedom. Freedom to express anything, to do anything, to make real – meaning virtually – the most crazy ideas that were almost impossible to make true in a real world. The internet was basically a very good thing which was promoting in a sort or another the democracy and all its components.
When I started to blog, just few blogs were available and most of them were debating too much serious information for a free source. It was like nobody was expecting to read free of anything, information or thoughts about NASA projects. People were not used to know what is freedom of expression and how to use it.
That was back than, but today blogs are more or less what faxes or xerox machines were in the late 80s. People learnt what connectivity is and even more how to collaborate online. Political, cultural and sociological, everything is nowadays on internet. Blogging helped to voluntarily provide information about what might be wrong or good with things of personal interests, but at which not many were looking. If you have enough connectivity and enough devices democracy is almost inevitable.
But this freedom transformed itself in a wild democracy were legitimacy of ideas, feelings, connections are shared without boundaries, like belonging to everyone. One could say that we become a big nation were we are assigning each other’s ideas like personal and we are happy about the feeling. Seams wrong and strange what internet and all this freedom of acting did to us. Like an effect of a wrong medicine, we are not anymore willing to consider outside views and opinions, even though we assigned to ourselves somebody else ideas, we induce tension and we are hungry of distinction. People might have known what connectivity is, but surely the democracy has not been understood at its fully principles and good feelings are now trade based on how much attention you are giving to one or other. We like to trade more then we like to be a good person.
We like to say about ourselves that we like to collaborate, but eventually no collaboration will happen until no trade is performed. Feels like we become captive to a digital sort of freedom and we started to think that we will achieve some rare potential by just doing it. Maybe we should try to get back to what some of us wanted originally and that was just to care about esteem of ourselves and others, belonging to a group and feel safe around the ones entitled with the word friend.*
Portobello and Chicken Consommé
Ingredients (for 2 servings) :
500g chicken wings with skin
2-4 cups water
3 ribs celery, roughly chopped
2 medium carrots, peeled and roughly chopped
1 large leek, roughly chopped
1 small onion, cut cross wise
1 bouquet garni (thyme, bay leaf, parsley, rosemary, tarragon)
2 tablespoons of organic wheat noodles
Kosher salt and freshly ground black pepper
2-3 big portobello mushrooms
1 tablespoon salted butter
1. In a big pot, at medium heat, cook until tender, in 2-4 cups water, the chicken wings, vegetables and the bouquet garni and season to taste. From time to time, spoon the foam using a fine mesh.
2. Meantime, cut the mushrooms in fine slices. Sauté the portobello mushrooms in one tablespoon of salted butter and then set aside.
3. When the vegetables and chicken are tender, about 30 minutes, discard them from the soup. Pour soup through a fine strainer into a saucepan and return to medium heat. Add in the noodles and cook for 5 minutes more until the noodles are tender.
4. Season consommé with salt and pepper. To serve, divide the consommé between 2 bowls and garnish with the sauté mushrooms.
