Almost Winter Burger

I ‘m starting my early mornings with foggy dreamy sky and cold wintery air. Winter seams to take over slowly the wonderful autumn that I lived this year. No rainy days, just beautiful yellow and amber leaves everywhere and milky sun.

The first days in winter are the most beautiful – a blend of autumn feeling like “I don’t want to leave” with winter feeling like ” Christmas Holidays”. I start that morning of milky winter with crispy quinoa burgers, with spinach baby leaves, cottage cheese and my favorite Czech sausage. Few snowflakes were falling…

Ingredients (for 2 servings):

50g quinoa
2 tablespoons cottage cheese
few baby spinach leaves
1 teaspoon Dijon mustard
1 teaspoon olive oil
fresh chive, finely chopped
fresh dill, finely chopped
1 garlic clove, finely chopped
salt and pepper
pickle cucumber, to server
any kind of sausage

Directions :
1. Soak quinoa overnight in 1-2 cups filtered water in a large bowl. The next day, rinse the grain twice. Purée rinsed quinoa. Mix it with the olive oil and the herbs and garlic. Season with salt and pepper.

2. Preheat the oven to 200º C. Line a parchment paper in a pan. Spread the quinoa batter in small circles or any shape you like. Cook for 5 – 10 minutes. Then set aside to cool. You will obtain 4 quinoa slices (or 2 buns). Assemble the burger : layer the mustard, then the cottage cheese, spinach, sausage and top with the other slice of quinoa bun.
