Red Beans and Peas Salad with Pancakes Noodles and Chive

Lately, the weather here in Czech Republic was disappointing. To see daily a grey sky, is not exactly what you are expecting at end of June. And what’s even more upsetting is the fact that the sun is appearing all the time when I’m at work, so actually I can not really enjoy it. I’m finishing work around 5.30 p.m., so by the time that I’m home, the sun disappears. Lucky for me this week I catch a day with sun and made a quick photo-shoot for my upcoming book.

The book will be out in July, so I’m working hard to have it ready. The book, is actually a totally independent project of mine (because I LOVE to work on projects – most probably a fault of mine from the corporation environment), which deserves to be launched on the first anniversary of the blog. I still can not give you yet the complete picture of this sublime project, but stay tight, July is around the corner.

Ingredients for the salad (makes 2 servings) :

200g green peas
200g canned red beans
2 teaspoons of fresh chopped chive
1 half of a small onion, finely chopped
10 cherry tomatoes, cut in half or sliced
30g pancakes noodles
sea salt and black pepper
vinegar

Directions :
1. In a small pan, cook in boiled salty water the peas, until soft, around 10-15 minutes. Filter the peas from the water and set aside.

2. In a big bowl mix the peas with the beans, tomatoes, onion, chive, and finally add seasoning. Distribute the salad on 2 plates and sprinkle with vinegar and pancakes noodles.
