Lately I had 1000 and more ideas and projects in my mind. One by one, I started to work on them. In July my little food blog will celebrate its first anniversary, and I’ve planed for this a special edition of my best recipes published (or not) here. This edition will be printed and it will be available in online store. A contest related to the anniversary will be launched soon. More details about this in July. Now, let’s just taste this super-easy summer salad.
Ingredients for the salad (makes 2 servings) :
10 cherry golden tomatoes
100 g rucola
4 medium radish
2 teaspoons of vinegar
1 tablespoon of olive oil
salt and pepper
1. Wash the vegetables and cut the cherries, tomatoes and radish in half or in slices. Don’t forget to put out the cherries stones. Cut the ends of the rucola salad and the leaves in half if needed.
2. Mix everything in a large bowl, add seasoning, the olive oil and the vinegar. Toss well and distribute the salad in two plats. Serve it with wholemeal crispbread.[/stextbox]
