Yesterday evening we had some friends invited over our house to watch the football match between France and Romania from the European Championship. Excluding now the fact that Romania lost sadly the match and everybody was sad, I spent just a few hours of my Saturday afternoon to prepare some good food for the invitees.
I found on internet this really pretty D.I.Y. invitation and we hand made some little Romania flags for all the invitees.
Considering the fact that it was a men’s evening, I prepared some cheese balls, pigs in blanket, grapes in chocolate and dessert of course.
For the cheese balls, you’ll need 100 gr sweet cottage cheese, 50 gr savory hard cow cheese and 2 tablespoons of sour cream. Mix everything, add seasoning and that’s all. Using a ice-cream spoon give to the cheese the shape of a ball. I decorated with baked red sweet pepper.
For the pigs in blanket (or American rolls) you’ll need mini sausages and pizza dough. It’s a very fast appetizer to make and very tasteful. Serve it with Dijon mustard. Moreover, some quick appetizer can be also the grapes in white chocolate glaze. Just melt some white chocolate on a bath water, let it cool a bit and then drop the grapes inside.
For the dessert I’ve prepared an pumpkin pie and vanilla mini tarts with whipped cream.
For the vanilla mini tarts you’ll need :
– 1 puffy dough
– 250 ml chilled whipped cream
– 3 tablespoons of powder sugar
– 300 ml milk
– 100 gr crystal sugar
– 4 tablespoons of flour
– 1 teaspoon of vanilla extract
– 1 tablespoon of lemon juice
How to prepare the vanilla cream :
Using a non-adherent pan, on medium heat, mix the milk with 100 gr sugar and add gradually the flour. Stir vigorously until the cream will start to thick. Now you can add the lemon juice and the vanilla extract. Set aside and let it cool.
How to prepare the whipped cream :
Using an electric mixer, combine the liquid chilled cream with the powder sugar and mix for 4-5 minutes.
How I assembled the tarts : I cooked the dough in small tart shapes, in oven at 180°C, I let it cool down completely, then I added the vanilla cream, and decorated with whipped cream. Refrigerate the cake for at least 1 hour before serving.
This autumn this is my 3 pumpkin pie, and my boyfriend already felt very much in love with my pies. It’s extremly easy to make this pie and very fast as well.
First, preheat your oven to 200°C. Bake a puffy dough (bought or hand made) for 5-7 minutes. Meantime, in a non-adherent pan, add 4 tablespoons of crystal sugar,and caramelize it. When the sugar it’s completely melt add in the pumpkin already sliced. Add 2 tablespoons of lemon juice and 1 tablespoon of cinnamon and mix everything of about 5 minutes or until the pumpkin start to brake down. Now it’s the time to add the caramelized pumpkin over the dough halfway baked. Beat 2 eggs with 2 teaspoons of sour cream and add them over the pie. Bake it for 10 minutes more, or until the pie turns golden-brown.
