These days I was inspired to cook, much more that my mother visited me and I wanted to try something special. Since some time I was thinking to try the kumquats (some type of mini orange, a bit sourish), but I didn’t knew what to do exactly with them. After all, I’ve decided : cheese cake with glazed kumquat to be!
You need :
– 120 gr plain biscuits;
– 250 gr mascarpone;
– 50 gr butter;
– 50 gr sugar;
– 1 egg;
– lemon extract;
– 1 lime;
– 10 kumquats.
I’ve scrumbled the biscuits, I mixed them with the butter and the lemon extract and the “dough” was ready. Using some circular metal shapes or directly onto the muffin tray, I’ve put all the mixture in portions and let it cool down in the fridge for 30 minutes.
Mean while I prepared the cream : I mixed well the mascarpone, added the sugar, the egg and the lime and kumquats (5) zest and I mixed again a bit. The cream must not be to liquid, must be enough hard not to “flow” over the paper forms. After the dough is cool enough, you can add the mascarpone cream and bake it in the oven for 30 minutes, until the cream its cooked. Be careful, the cream must not be too cooked, the consistency must be similar to a pudding.
After, I glazed the 5 kumquats which were left. I’ve slided them, put them on a aluminum foil, sprinkle 2 tablespoons of sugar and glaze them for 15 minutes in the oven.
Putting together the cheese cakes was quick and easy : after the dough and the mascarpone cheese were chilled, I added the cherry jam and the straciatella cream and I decorated with glazed kumquats.
