The muffins are my favorite cakes. Doesn’t matter if they are with chocolate, fruits or just simple Madelaines. Today I’ve tried a combination between the basic muffin recipe and fruits – apricot, and they turned out amazingly good. I used small paper shapes, to make small muffins to be able to take them anywhere you go, and much bigger, to serve at home.

For making the muffins you’ll need :

– 2 large eggs
– 100 gr sour cream
– 100 gr flour
– 100 gr crystal sugar
– 1 tablespoon of unsalted butter at room temperature
– 1 teaspoon of baking powder
– red food coloring
– extract rum oil
– 10 small apricots

Mix the eggs with the sugar, until the sugar will be melt completely, then add gradually the butter. Mix well until combined, and then add the sour cream, the rum oil, sift the flour and the baking powder.

Now you can add the food cooling and the apricots sliced. Fold carefully the mixture using a spatula. Poor the mixture onto the muffin tray and bake them for 15 minutes at 200°C.
